Stuffed Eggplant

A delicious and healthy stuffed eggplant recipe!

Ingredients

  • Eggplant 2 u
  • Fried tomato 100g (3,4 oz.)
  • Parmesan To taste
  • Mince 500g (17,6 oz.)
  • Onion 100g (3,4 oz.)
  • Parsley A pinch
  • Pepper A pinch
  • Garlic A pinch
  • Salt (optional)

Method

  1. Cut the aubergines in half and cook them in the Steam Case with tray for 5 minutes at 800W in the microwave.
  2. Finely chop the onion, tomato and garlic and mix it with the meat along with the parsley, pepper and salt. Reserve.
  3. With the help of a spoon and very carefully, remove the center of the eggplant. Mix the meat with the aubergine and grate Parmesan cheese on top.
  4. Place the mixture back into the eggplant.
  5. Cook the aubergines for 4 more minutes at 800W in the microwave.
  6. You already have the stuffed aubergines ready to eat!
