Chocolate and strawberry mousse pyramide

 Ingredients
- 120g good-looking strawberries
 - 15g milk
 - 85g heavy cream
 - 15g butter
 - 150g chocolate
 - 3 egg yolks
 - 15g sugar
 - 2 egg whites
 
Method
- Bring the cream and milk to a boil and pour over chopped chocolate in a bowl. Stir until dissolved. Then add the butter which has been left to soften at room temperature or put in the microwave for a few seconds. Mix well and set aside.
 - Beat the egg whites until stiff with the help of an electric whisk and add the sugar. Continue beating, adding more egg yolks, and stop beating after a few seconds.
 - Mix 1 / 5 part of the mixture with the chocolate cream and then add the rest, folding the ingredients in carefully from top to bottom.
 - Place thin slices of strawberries on the sides of the pyramids.
 - Fill with mousse and put the dessert in the freezer.
 - Before serving, unmould the pyramids onto serving plates pressing the mould from the outside, let defrost for 20 minutes and serve.
