Pastry pie with vegetables and cheese in air fryer

Prepare this puff pastry cake with vegetables and cheese: easy and without dirtying your air fryer

Ingredients
- 200 g puff pastry dough
- 1 eggplant
- 1 red pepper
- 2-3 pear tomatoes
- 1 zucchini
- 40 g soft goat cheese
- 1 garlic clove, diced
- 2 rosemary sprigs
- 1 egg
- Salt, Pepper
Method
- Cut the vegetables into pieces and place the red pepper in the Steam case .
- Cook for 2 minutes at 900W and then add the zucchini, tomato and eggplant and cook for 3 minutes.
- Remove the liquid released by the vegetables.
- Spread the pastry dough over a flour-coated surface using a roller.
- Create two large discs of similar sizes and cover the air fryer mold with one of them.
- Fill the pastry dough with the vegetables and the crumbled goat cheese, salt, pepper, chopped garlic and rosemary.
- Make small cuts in the remaining puff pastry disc to vent steam and cover the pie.
- Egg wash the puff pastry and cook in the preheated air fryer at 180ºC until the pastry is crispy and golden.
- Remove the pie from the mold and place on a dish.
