Lemon bundt cake

Try this delicious lemon bundt cake with a delicious citrus touch!
Ingredients
- 3 eggs
- 120 g lemon yogurt
- 250 g flour
- 200 g sugar
- 120 g olive oil
- 1 envelope of baking powder
- 1 teaspoon grated lemon peel
- 1 teaspoon butter
- 1 egg white (glaze)
- 200 g icing sugar (glaze)
- A few drops of lemon juice (glaze)
- Lemon zest (glaze)
Method
- In a bowl, add the eggs and sugar and beat with an electric whisk for a couple of minutes. Add the lemon peel, yogurt, and the sifted flour and baking powder. Mix again and finally, add the oil.
- Pour the mixture into the mold and bake in the oven, preheated to 180 ºC, for 1 hour. Before taking it out, stick a toothpick in the center to see if it's done. If it does not come out clean, cook for another 5 to 10 minutes. Finally, let cool completely and remove from the mold.
- For the glaze, beat the egg white with the sugar. Add a few drops of lemon juice for a more unctuous texture and decorate the surface of the cake. Finish the savarin with a little lemon zest. *For best results, grease or flour the pan at the beginning of the preparation.
