Cauliflower and quinoa meatballs

Vegetarian cauliflower and quinoa meatballs

Ingredients
- 5 oz of cauliflower (150 g)
- 3 oz of quinoa (90 g)
- 1 oz of bread crumbs (30 g)
- 1 of garlic
- 2 tablespoons of olive oil
- 3,5 oz of purple onion (100 g)
- 1 of egg
- 1 teaspoon of turmeric
- Salt
- Pepper
- For the sauce:
- 1 fl.oz. of olive oil (30 ml)
- 1 oz of onion (30 g)
- 2 of garlic clove
- 1 tablespoon of curry powder
- 1 teaspoon of cumin powder
- 1 teaspoon of ginger powder
- 7 oz of crushed tomato (200 g)
- 6,7 fl.oz. of coconut milk (200 ml)
- 1 teaspoon of raw cane sugar
- Coriander leaves
- Salt
Method
- Mash the cooked cauliflower with the Veggie Ricer . Peel and chop the onion and garlic.
- Cook 90 g of quinoa with 210 ml of water in the Quick Quinoa & Rice Cooker .Fry the onion and garlic in a frying pan with two tablespoons of oil. When golden, add the cauliflower and fry for a few more minutes.
- Mix well, season and add turmeric, egg and breadcrumbs. Mix well and use the Veggie Balls to prepare the balls. Place the veggie balls on a baking tray with the Silicone baking mat and place in a preheated oven at 200ºC. Cook for about 10 minutes or until golden. For the sauce: Peel and chop the onion and garlic. In a frying pan, heat the oil and fry the onion and garlic. When golden, add the tomato and sprinkle on sugar. Let cook for a few minutes.
- Add the coconut milk, all other spices and cook for 7-8 minutes. Add the vegetarian meatballs and cook with the sauce for another 10 minutes. Sprinkle with chopped coriander.
- Serve the cauliflower and quinoa balls with the sauce. All set!
