A delicious and healthy stuffed eggplant recipe!

Ingredients
- Eggplant 2 u
- Fried tomato 100g (3,4 oz.)
- Parmesan To taste
- Mince 500g (17,6 oz.)
- Onion 100g (3,4 oz.)
- Parsley A pinch
- Pepper A pinch
- Garlic A pinch
- Salt (optional)
Method
- Cut the aubergines in half and cook them in the Steam Case with tray for 5 minutes at 800W in the microwave.
- Finely chop the onion, tomato and garlic and mix it with the meat along with the parsley, pepper and salt. Reserve.
- With the help of a spoon and very carefully, remove the center of the eggplant. Mix the meat with the aubergine and grate Parmesan cheese on top.
- Place the mixture back into the eggplant.
- Cook the aubergines for 4 more minutes at 800W in the microwave.
