Spinach With Raisins, Pinenuts & Eggs (serves 4)

Ingredients

  • 500 g fresh spinach
  • 4 eggs
  • 80 g raisins
  • 80 g pine nuts
  • Salt

Method

  1. Clean and cut up the spinach. Place it on the tray and add salt to taste.
  2. Cover and cook for 25 minutes at 200ºC.
  3. Add the raisins and pine nuts and stir.
  4. Place the eggs on top of the spinach and salt to taste.
  5. Cover and cook for a further 8 minutes at 200ºC. Check that the eggs are cooked and it’s ready to serve.
