Spinach Quiche

Ingredients

  • 100g spinach
  • 200g potatoes
  • 75ml (1/2 cup) cream
  • 2 eggs
  • 2 teaspoons breadcrumbs
  • 2 teaspoons butter
  • Salt

Method

  1. Boil the potatoes in their skins for 20 minutes in their skins in salted water or cook in the microwave until done. Drain them, leave to cool and then mash.
  2. Boil the spinach for 5 minutes in a saucepan with a little water. Drain and squeeze them to get rid of as much water as possible. Purée them using an electric blender.
  3. Mix the spinach with potatoes, eggs, breadcrumbs and 4 dessertspoons of cream. Season lightly. Pour mixture into the mould.
  4. Microwave on medium setting (1000 W) for 10 to 15 minutes in a bain marie, or for 8 to 10 minutes without the bain marie.
  5. Turn out the quiche onto a plate and pour the rest of the hot cream over it.
