Ingredients
- Ingredients Amount Peeled Aubergines 1 unit Chopped Garlic 2 cloves Chopped Onion 1 unit (100 g) Olive Oil 2 tablespoons Sweet Pepper 1 teaspoon Curry ½ teaspoon Cumin ½ teaspoon Black Sugar 1 tablespoon Tomatoes peeled and cut in dice
Method
- Cut the vegetables into small dice, place them on the grill with two tablespoons of olive oil, salt and pepper. Bake in the oven for 30 minutes at 180ºC.
- Make alioli with the egg yolk, the garlic and oil.
- Add the tomato, place over the cod and cook for 10 minutes at 180ºC.
- Cover the cod with the alioli and cook for 5 minutes more with the grill open.
