Salmon burger with mango relish

Ingredients
- 600g fresh salmon or whitefish free of skin and bones
- 2 tbsp. grated or chopped breadcrumbs
- 1 spring onion
- 8 stalks of chives
- 2 tsp. old-style mustard
- salt
Method
- Peel the spring onion and chop finely with the chives. Chop the fish and mix in a bowl with the spring onion, chives, breadcrumbs, mustard, salt and pepper.
- Make 4 hamburgers.
- Add the other ingredients.
- Mango sauce: Chop the mango and radish and season with lime juice, oil, salt, pepper and coriander leaves.
