Mackerel in Orange Marinade

Ingredients

  • 1 big mackerel
  • 150 g olive oil
  • 50 g apple vinegar
  • 10 ml white vermouth
  • ½ orange juice
  • ¼ orange peel
  • 1 small fresh thyme sprig
  • 1 small fresh rosemary sprig

Method

  1. Fillet the mackerel, leaving the skin. Remove the bones with the aid of tweezers without damaging the fish. Cut into 5 cm pieces.
  2. Put the mackerel in the Cooking Bag with the other ingredients. Close hermetically the Cooking Bag and leave in the fridge for at least 1 h.
  3. This step is optional, as you can cook the mackerel directly. Open the bag and cook for 5 minutes at 350 W in the microwave.
  4. Options: You can marinade the mackerel for at least 2 h and eat it without cooking.
  5. You can also cook it directly, without marinating, and keep it in the fridge. The preserving time is longer when the food is cooked in the same recipient in which it is going to be preserved, and thanks to the vinegar and the oil, that prevent oxidizing.
