Goat's cheese terrine with peppers

Ingredients

  • 1 red pepper
  • 2 green peppers
  • 170 grs fresh goat's cheese
  • 150 grs cream cheese
  • 80 grs Parmesan cheese
  • 5 eggs
  • 1 tablespoon sesame seeds
  • 1 teaspoon cumin
  • Salt

Method

  1. Bake the peppers in a preheated oven at 220ºC for 20 minutes.
  2. Peel and deseed the peppers. • Blend the cheeses and eggs in a food processor then add the sesame seeds and a pinch of cumin.
  3. Pour into the mould, alternating with the peppers cut into strips. • Cook in a preheated oven at 170ºC for approximately 1 hour.
  4. Let cool and refrigerate for 2 hours before removing the terrine from the mould and cutting.
  5. Decorate with the sesame seeds and serve with rocket leaves or other green leaves.
  6. You may also use yellow peppers to make the terrine more colourful.
