Aubergine cake

Ingredients

  • Shortcrust dough
  • 2 eggplants
  • 150 g lean pork meat chopped
  • 1/2 onion
  • 100 g bacon
  • 125 ml cream
  • 30 g grated Parmesan cheese
  • 4 table spoons olive oil
  • salt

Method

  1. Place the pastry inside a pie mould and bake in a preheated oven at 200ºC for 5-6 minutes.
  2. Wash and slice the eggplant into sheets.
  3. Heat the oil in a frying pan and sautee the chopped onion for 5-6 minutes.
  4. Add the chopped meat and when it is almost done, add the bacon and then the cream.
  5. Fill the mould with a layer of eggplant and a layer of the meat mixture then sprinkle the Parmesan cheese on top.
  6. Place in a preheated oven at 180ºC for 45 minutes.
