Chickpea and spinach sausages

Vegan chickpea sausages in 20 minutes!

Ingredients

  • Cooked chickpeas 100 g
  • Spinach 60 g
  • Onion 50 g
  • Water 50 ml
  • Pine nuts (optional) 5 g
  • Garlic 1 clove
  • Olive oil 2 tbsp
  • Salt 1 tsp
  • Sweet paprika 1⁄2 tbsp
  • Cumin 1⁄2 tbsp
  • Chickpea flour 50 g
  • Raisins 25 g

Method

  1. Finely dice the onion and garlic. Place the previous ingredients into a medium saucepan and stir until the onion is soft. Add the spinach and cook for 3 minutes or until the spinach reduces in size
  2. Blend the chickpeas with salt, the spices and a little water until they are evenly mixed.
  3. Cut the spinach, raisins and pine nuts into small pieces and add to the previous mix together with the flour, until all the ingredients are combined.
  4. Pour the contents into the Veggie Sausages and cook for 5 minutes at 800W. Leave to rest for 2 minutes before removing.
  5. For a crisp texture, use a frying pan or Microwave Grill (2 minutes at 800W).
