Caramel, mango and coconut muffins

Enjoy this easy and delicious muffins recipe at home!
Ingredients
- 60 g white sugar
- 1 egg
- 40 ml sunflower oil
- 60 ml whipping cream
- 70 ml milk
- 20 g butter
- 1 tsp vanilla extract
- 160 g flour (you can substitute half with wholemeal flour)
- 30 dehydrated ground coconut
- 1 tsp baking powder
- 1 pinch of salt
- 20 g dried coconut shavings
- 120 g fresh mango pulp
- 3 toffee candies
Method
- In a bowl, beat the egg with the sugar and oil until light and frothy.
- Add the milk and cream, vanilla, flour, baking powder, ground coconut, and a pinch of salt and continue beating with an electric whisk for 2 more minutes. Add the melted butter and mix again.
- Fill the cups of the mold and add some diced mango and chopped candies. Bake in the oven, preheated to 180 °C, for 20-25 minutes until the muffins have risen and are firm to the touch. Finally, remove from the oven and allow to cool. Finish with diced mango and coconut shavings. *For best results, grease or flour the pan at the beginning of the preparation.
