Seafood and guacamole Christmas appetizer

Ingredients

  • 1 medium lobster or 6 prawns
  • Juice from 1 lemon
  • Salt Pepper
  • 60 ml mild olive oil
  • 2 tablespoons white wine
  • Sweet paprika
  • Sprouts to decorate
  • For the guacamole:
  • 2 medium avocados
  • 1⁄2 tender onion
  • 1 firm red tomato
  • 1 large or 2 small limes
  • 2 cilantro stalks (optional)

Method

  1. Separate the head from the body of the shellfish.
  2. If using lobster, chop the head.
  3. Place the shellfish bodies in the Steamer Case. Add the squeezed lemon juice, a pinch of salt and pepper, and microwave at 900W for 3 minutes.
  4. Remove and set aside.
  5. In the same case, with the cooking juice, place the shellfish heads, the oil, the peeled and split garlic clove, the wine, a teaspoon of sweet paprika, and a pinch of salt.
  6. Microwave at 900W for 2.5 minutes. Remove, stir, pressing to release the juice from the heads, strain, and set aside.
  7. Cut the avocados in half and remove the pit and skin with a spoon.
  8. Mash them with a fork in a bowl and add the lime juice and the finely chopped onion, tomato, and cilantro.
  9. Add a pinch of salt and mix well. Fill 6 glasses halfway with homemade guacamole, place two slices of lobster inside each one, and top with a tablespoon of prepared oil and some sprouts to taste.
