Wild Berries Jelly

Ingredients
- 12 gelatine sheets
- 1 litre strawberry juice
- 150 g. sugar
- 500 g. wild berries
Method
- Soak the gelatine sheets in cold water.
- Heat some of the strawberry juice and sugar gently.
- Remove from the heat and dissolve the drained gelatine in the liquid. Add the rest of the strawberry juice.
- Pour the mixture into the mould and leave in the fridge until semi-set. Add the wild berries and leave in the fridge for 24 hours until fully set.
- For easier release, semi-freeze the jelly and press gently on the base of the mould when turning out; serve completely defrosted.
- Even more refreshing when served with yoghurt ice-cream!
