Wild Berries Jelly

Ingredients

  • 12 gelatine sheets
  • 1 litre strawberry juice
  • 150 g. sugar
  • 500 g. wild berries

Method

  1. Soak the gelatine sheets in cold water.
  2. Heat some of the strawberry juice and sugar gently.
  3. Remove from the heat and dissolve the drained gelatine in the liquid. Add the rest of the strawberry juice.
  4. Pour the mixture into the mould and leave in the fridge until semi-set. Add the wild berries and leave in the fridge for 24 hours until fully set.
  5. For easier release, semi-freeze the jelly and press gently on the base of the mould when turning out; serve completely defrosted.
  6. Even more refreshing when served with yoghurt ice-cream!
