Vanilla ice cream with caramelized nuts and chocolate sauce

Ingredients

  • 500 ml vanilla ice cream
  • For the sauce:
  • 100 ml whipping cream
  • 100 g dark chocolate
  • For decorating:
  • 200 g nuts (almonds, hazelnuts, pine nuts, walnuts, macadamia, etc…)
  • 50 g sugar
  • 1 tablespoon water
  • 1 tablespoon lemon juice

Method

  1. Heat the sugar, water and lemon juice in a saucepan until dissolved, add the nuts and cook until the sugar has caramelized. Pour onto the Lékué baking sheet and allow to cool. Then break on top of a cutting block.
  2. Break up the chocolate and place in a bowl, then add the boiling cream. Stir until creamy.
  3. Serve the ice cream in individual bowls, add the caramelized nuts and decorate with the chocolate sauce using the Decopen.
