Spinach With Raisins, Pinenuts & Eggs (serves 2)

Ingredients
- 250 g fresh spinach
- 2 eggs
- 40 g raisins
- 40 g pine nuts
- Salt
Method
- Clean and cut up the spinach. Place it on the tray and add salt to taste.
- Cover and cook for 25 minutes at 200ºC.
- Add the raisins and pine nuts and stir.
- Place the eggs on top of the spinach and salt to taste.
- Cover and cook for a further 8 minutes at 200ºC. Check that the eggs are cooked and it’s ready to serve.
