Spinach roll with salmon and fresh cheese

Ingredients
- 100 g (3.53 oz) boiled spinach
- 5 eggs
- 1 tsp baking soda
- 1 tsp salt
- For the filling:
- 200 g (7.05 oz) smoked salmon slices
- 350 g (12.34 oz) soft cheese
- 4 sprigs dill
- Pepper
Method
- 1 Boil the spinach, drain it well, and process using the blender.
- Beat the egg yolks and baking powder, add the spinach and a pinch of pepper, and mix.
- 2 Using an electric whisk, beat the egg whites until stiff. Gently fold the whites into the mixture.
- Add the melted butter, pour the batter onto the baking sheet which should be placed onto an oven rack (for support), and spread well with the spatula.
- 3 Place the rack with the baking sheet in the preheated oven at 200ºC (392ºF), and bake for 12-14 minutes until the cake starts to turn golden.
- 4 Remove from the oven and allow to cool. 5 Chop the dill and mix with the fresh cheese.
- Spread a smooth layer over the mixture using the spatula, and cover the entire surface with the salmon slices.
- Roll it using the baking sheet, cut its ends off, place it on a serving platter, and leave to cool in the fridge.
