Salmon burger with mango relish

Ingredients

  • 600g fresh salmon or whitefish free of skin and bones
  • 2 tbsp. grated or chopped breadcrumbs
  • 1 spring onion
  • 8 stalks of chives
  • 2 tsp. old-style mustard
  • salt

Method

  1. Peel the spring onion and chop finely with the chives. Chop the fish and mix in a bowl with the spring onion, chives, breadcrumbs, mustard, salt and pepper.
  2. Make 4 hamburgers.
  3. Add the other ingredients.
  4. Mango sauce: Chop the mango and radish and season with lime juice, oil, salt, pepper and coriander leaves.
