Melt in your Mouth Mushroom and Camembert Quiche

Ingredients
- Pastry for 9-inch pie crust (see recipe below)
- ½ cup finely chopped shallots
- 1 ½ cups of your favorite mushrooms, sliced and sautéed if desired
- ¾ cup freshly shredded Swiss cheese
- 4 eggs
- 2 cups heavy whipping cream
- 1 teaspoon salt
- ½ teaspoon white pepper
- ¼ teaspoon ground nutmeg
- 1/3 pound Camembert cheese
Method
- Pre-heat oven to 425°F. Make Flaky Pastry Pie Crust. Roll out and carefully place into a Lékué quiche pan, pressing firmly against bottom and sides. Trim edge of pastry even with top of the quiche dish. Sprinkle ¼ cup shallots, ¾ cup of the mushrooms and all of the Swiss cheese on the bottom of the crust. Add the remaining ¼ cup shallots, ¾ cup mushrooms to the first layer of ingredients. Beat eggs slightly; whisk in cream, salt, pepper and nutmeg. Pour into Lékué quiche pan. Remove the rind of the Camembert cheese and cut into slivers. Place on top of the mixture. Bake 15 minutes at 425°F. Reduce oven temperature to 300°F. Bake about 30 minutes longer or until knife inserted in center comes out clean. Let cool 20 minutes before cutting. Picture: recipe mada by Albert Iglesias - El Nostre Pá (Bcn)
