Mackerel in Spices

Ingredients
- 2 mackerels
- 200 g of red and yellow cherry tomatoes.
- 50 g of fennel
- 1 large shallot
- Basil
- Tarragon
- Garlic
- 5 cl of white wine
- Olive oil
- Salt, pepper, nutmeg
Method
- Clean the mackerels empty.
- Slice the fennel and the shallot and put them into the papillote.
- Add the tomatoes, garlic, herbs, olive oil and salt and pepper.
- Place the mackerels on top of the vegetables, add the white wine and bake at 180 ºC for 20 minutes.
- Pour olive oil on top.
