Cookies with icing

Ingredients
- 250 g butter room temperature
- 150 g sugar
- 1 egg
- 1 teaspoon vanilla sugar
- 500 g sieved flour
- Icing:
- 1 egg white
- 200 g powdered sugar
- 3 drops of lemon
- Food colouring
Method
- In a bowl, add the butter, sugar, vanilla sugar and egg and mix well.
- Add the flour bit by bit and without working the dough too much so it doesn´t become hard.
- Make a ball with the dough.
- Leave in the fridge for around 30 minutes wrapped in cling film.
- Using a rolling pin, extend the dough to a thickness of 5 mm.
- Cut using the desired cookie cutter and put the shapes on the baking sheet.
- Bake in the preheated oven at 180º C for during 15-20 minutes. Decorate the cookies to your liking.
- Icing preparation: Beat the egg white until stiff peaks form and slowly add the powdered sugar.
- Add the lemon drops and mix until its volume doubles.
- Add the desired food colouring and decorate with the help of the Decopen.
