Chicken with Tomato and Mozzarella Cheese

Ingredients

  • 2 thin chicken breasts or 1 half boneless, skinless chicken breast, cut in half and butterflied open
  • 3 tbsp crushed tomatoes or fresh chopped tomatoes
  • 2 slices fresh mozzarella cheese or 3 tbsp of shredded mozzarella

Method

  1. Put the water in the bottom of the Lékué Steam Case and then fit the tray inside. Put the chicken breasts on top of the rack. Drizzle the olive oil over the chicken breasts and then season with a pinch of salt and pepper. Water is put in the bottom to create more moisture so the chicken doesn’t dry out. The olive oil is added for flavor, but it can be left out if desired.
  2. Close the lids and cook in the microwave for 3 minutes at 800watts.
  3. Remove from the microwave, spoon the tomatoes on top of the chicken and then place the slice of mozzarella. Season again with a pinch of salt and pepper. Mozzarella itself is usually very mild in taste. Just the slightest bit of salt and pepper really enhances the flavor of the cheese.
  4. Close the lids again and cook for an additional 1 minute and 30 seconds at 800wattts. We do this step to warm the tomato sauce and melt the cheese.
  5. Remove from the microwave and place chicken on a plate.
