Bacon and cheese cake

Ingredients
- 6 eggs
- 360 g flour
- 2 teaspoons powdered yeast
- 300 g smoked bacon, cut into strips
- 200 ml olive oil
- mild 200 ml milk
- ½ teaspoon nutmeg
- 300 g grated Gruyere cheese
- 1 teaspoon salt
- ½ teaspoon ground black pepper
Method
- Separate the egg whites from the yolks.
- Add the flour sifted with the yeast to the yolks and dilute with milk and oil, then beat.
- Beat the whites and a pinch of salt into stiff peaks and gently fold into the yolk mixture.
- Add the cheese, bacon and pepper and stir.
- Pour into the mould. Bake in a preheated oven at 180ºC for 40 minutes.
- Serve warm accompanied by a green salad.
