Aubergine cake

Ingredients
- Shortcrust dough
- 2 eggplants
- 150 g lean pork meat chopped
- 1/2 onion
- 100 g bacon
- 125 ml cream
- 30 g grated Parmesan cheese
- 4 table spoons olive oil
- salt
Method
- Place the pastry inside a pie mould and bake in a preheated oven at 200ºC for 5-6 minutes.
- Wash and slice the eggplant into sheets.
- Heat the oil in a frying pan and sautee the chopped onion for 5-6 minutes.
- Add the chopped meat and when it is almost done, add the bacon and then the cream.
- Fill the mould with a layer of eggplant and a layer of the meat mixture then sprinkle the Parmesan cheese on top.
- Place in a preheated oven at 180ºC for 45 minutes.
