Almond Macaroons

Ingredients

  • 150 g sugar
  • 2.5 egg whites
  • 250 g ground almonds
  • ½ teaspoon grated lemon peel
  • 40 g whole, raw almonds, peeled

Method

  1. Pour the egg whites into a bowl and beat until stiff peaks form with the help of an electric beater. Continue beating as you slowly add the sugar.
  2. Add the ground almonds and lemon peel and stir well. Pour the batter into a piping bag and, with a large, plain nozzle, make small balls on a baking sheet covered with the silicone mat, leaving 2 or 3 cm between them.
  3. Place a whole almond on top of each ball and bake in a preheated oven at 170ºC for 12-15 minutes, or until slightly golden.Remove from the oven, allow to cool and serve.
  4. Tip: If you don’t have a piping bag, you can also use a small spoon although the shapes will vary slightly.
