Almond Macaroons

Ingredients
- 150 g sugar
- 2.5 egg whites
- 250 g ground almonds
- ½ teaspoon grated lemon peel
- 40 g whole, raw almonds, peeled
Method
- Pour the egg whites into a bowl and beat until stiff peaks form with the help of an electric beater. Continue beating as you slowly add the sugar.
- Add the ground almonds and lemon peel and stir well. Pour the batter into a piping bag and, with a large, plain nozzle, make small balls on a baking sheet covered with the silicone mat, leaving 2 or 3 cm between them.
- Place a whole almond on top of each ball and bake in a preheated oven at 170ºC for 12-15 minutes, or until slightly golden.Remove from the oven, allow to cool and serve.
- Tip: If you don’t have a piping bag, you can also use a small spoon although the shapes will vary slightly.
