Pumpkin, oat and turmeric donut

Make a delicious homemade donut recipe in 40 minutes!

Ingredients
- Cooked pumpkin 300 g
- Buckwheat flour 100 g
- Oats 170 g
- Soy yogurt 200 g
- Eggs 4
- Baking powder 1 tbsp
- Honey 200 g
- Ground cinnamon 2 tsp
- For the topping:
- White chocolate 200 g
- Turmeric 2 tsp
Method
- Preheat the oven to 180ºC
- Place the pumpkin with the eggs, the yogurt, and the honey in a bowl and mix until you get an even mixture.
- Add the oats, flour, baking powder, and cinnamon until all ingredients are combined. Leave the dough to rest for 10 minutes.
- Place the dough in the chambers of the Mold for donuts .
- Bake for 20 minutes at 180ºC.
- Leave to cool and remove.
- For the topping , melt the white chocolate in a bowl in the microwave for 30 seconds, mix and place it back in the microwave for another 20 seconds until the chocolate is liquid.
- Place 1/3 of the melted chocolate in a separate bowl and add the turmeric. Mix until all the chocolate is yellow in color.
- Coat the donut with the white chocolate, and add a few decorative lines with the white chocolate and turmeric mix. Ready to eat!
