Ensalada de quinoa con aguacate y hortalizas

Ingredients
- 240 g quinoa
- 400 ml water
- 1 avocado
- 10 cherry tomatoes
- 1/2 small onion
- 1/2 carrot
- 50 g black olives
- 100 g fresh cheese or mozzarella
- extra virgin olive oil
- the juice of 1 lemon
- 1 tablespoon Dijon mustard
- ground pepper
- salt
Method
- Cook the quinoa with the water and a pinch of salt in the Rice&grain Cooker in the microwave at maximum power (800W).
- Wash, peel and finely chop the onion and carrot and cut the tomatoes and cheese in half.
- Cut the avocado into slices.
- Finally, mix all the ingredients and toss with the vinaigrette.
