Carrot cake donut

The carrot cake turned into a donut!

Ingredients
- Carrot 100g
- Cooked sweet potato/pumpkin 75g
- Egg 1 ud.
- Dates 100g
- Water 40ml
- Olive oil 50g
- Cinnamon 1 tbsp
- Nutmeg 1 tsp
- Cardamom 1 tsp
- Baking powder 10g
- Gluten free flour 100g
- For the topping:
- Cream cheese 100g
- White chocolate 50g
- Ground cinnamon To taste
Method
- Preheat the oven to 180ºC.
- Remove the stones from the dates and leave them to soak for 10 minutes in 60 ml warm water.
- Blend the dates with water until you get a smooth paste. Strain and set aside.
- Peel and slice the carrot. In a separate bowl, mix all the wet ingredients together to form an even mixture.
- Add the dry ingredients and mix. Place the mixture in each chamber of the Mold for donuts using a spoon or a piping bag. Bake for 20 minutes at 180ºC. Leave to cool and remove.
- For the topping , melt the white chocolate in a microwave for 30 seconds. Mix and place it back in the microwave for another 20 seconds until it is liquid.
- Mix the cream cheese with the melted white chocolate until the mixture is smooth.
- Apply the topping using a piping bag or a spatula, and sprinkle on cinnamon to taste. Done!
