BBQ sausage with textured soy

A vegan option for barbecue sausages!

Ingredients

  • Textured soy 50g
  • Cooked red beans 150g
  • Soy sauce 15ml
  • Tomato sauce 75ml
  • Onion 30g
  • Green pepper 30g
  • Coriander seeds 1⁄2 tbsp
  • Spicy paprika
  • Cornflour 35g
  • Olive oil 20g
  • Salt

Method

  1. Place the cooked beans in a bowl and mash to a purée.
  2. Cut the onion and pepper into cubes.
  3. Place the onion and pepper in a saucepan with oil, sauté until the onion is browned. Add the tomato sauce, soy sauce, cumin, coriander seeds, salt, and spicy paprika to taste.
  4. Reduce to low heat for 5 minutes. Remove from the heat and add the textured soy. Leave to rest for 5 minutes.
  5. Combine the beans and the cornflour with the previous mix and blend to an even mix.
  6. Pour the contents into the Veggie Sausages and cook for 5 minutes at 800W. Leave to rest for 2 minutes.
  7. For a crisp texture, use a frying pan or Microwave Grill (2 minutes at 800W).
  8. Brush the sausages with the BBQ sauce to get the perfect caramelised finish.
