Wholeweat veggie quiche

A healthy and delicious meal.
Ingredients
- To prepare dough
- 250g whole wheat flour
- 100g butter
- 50g cool water
- Salt
- To prepare the filling:
- 1 red onion
- 1 bunch of green asparagus
- 1 zucchini
- Olive oil
- 200g natural tofu
- Salt
- Pepper
- 6 Cherry tomatoes
- 2 eggs
Method
- To prepare the dough mix the flour with butter, add a pinch of salt and gradually incorporate the water till you get a dough that does not stick or break
- Preheat the oven to 180ºC
- Knead with a rolling pin on a table sprinkled with flour. Cover with a baking paper and spread over dried vetables and bake for 20 minutes
- Remove from the oven, remove vegetables and the paper. Save
- Peel and cut onion into thin slices. Cut the base of the asparagus and slice them. Remove the ends of the zucchini and cut into slices.
- Grind the tofu with a pinch of salt and pepper.
- Cook the onion in the microwave in the Steam Cooker for 2 minutes to 800W. Then add the zucchini and cook for 1 minute. And finally add the asparagus and cook for 1 minute
- Beat the eggs with a pinch of salt. Mix the tofu gently. Pour over the cooked dough and add the cooked vegetables
- Cut Cherry tomatoes and place them above the surface.
- Bake for 25 minutes or till it gets Brown. Remove and add olive oil and serve
